Generations later, in the 19th century, Austrian Archduke Luis Salvador acquired the estate, creating a museum that celebrated the island’s traditional trades. Today, the estate is lovingly maintained by Bruno Entrecanales and the team at Sonmo, who are devoted to restoring and preserving its agricultural legacy.

An Olive Oil that Embodies Mallorca

Sonmo’s signature product is its Extra Virgin Olive Oil, produced from the estate’s ancient olive trees in the UNESCO-listed Tramuntana mountains. Hand-harvested at the season’s peak, the oil has a vibrant flavor profile with notes of crisp apple and fresh nuts, offering an authentic taste of Mallorca. Alongside the olive oil, you’ll also find Organic Whole Green Olives, made using a centuries-old recipe for the “sencera” variety.

Each gin bottle is an art piece in itself, crafted by the Gordiola family, who have been perfecting the glass-blowing tradition in Mallorca for over 300 years.
